Low Carb Turkey Picadillo

Picadillo is a Cuban hash traditionally made with ground beef adding raisins for a bit of sweetness and olives for a bit of saltiness. This turkey picadillo is a low carb spin on a Cuban classic dish. I substituted the raisins with sweet red bell peppers, as well as ground turkey for the ground beef creating a healthier and very delicious dish that can be served over white rice or even used as a filling for your empanadas.

Ingredients
  1. 1 tablespoon olive oil
  2. 1 medium yellow onion - finely chopped
  3. 1 medium red bell pepper - finely chopped
  4. 1 medium green bell pepper - finely chopped
  5. 4 garlic cloves - minced
  6. 1 family pack of ground turkey - 93% lean (about 3lbs)
  7. 1 can of tomato sauce - 8 oz
  8. 1 bay leaf
  9. 2 teaspoons of dried oregano
  10. 1 tablespoon of ground cumin
  11. 1 teaspoon of kosher salt
  12. 1 teaspoon of ground black pepper
  13. 1 teaspoon of garlic powder
  14. 1/2 teaspoon of onion powder
  15. 1 packet of Goya Sazon Culantro y Achiote (optional)
  16. 8- 10 pimiento stuffed manzanilla olives
Instructions
  1. Heat oil in a large nonstick saute pan over medium heat
  2. Add to the oil the onions, red and green bell peppers, saute until softened, about 4 minutes
  3. Add in the garlic and cook until fragrant - about 30 seconds
  4. Add ground turkey to the pan and begin to brown
  5. Season with oregano, cumin,salt, pepper, garlic, and onion powder
  6. Optional - add 1 packet of Sazon Goya
  7. Mix until all the meat and vegetables are well seasoned
  8. Add the pimiento stuffed olives to the mixture and pour in the tomato sauce
  9. Mix well
  10. Reduce heat to low and let simmer for 15 minutes
  11. When done remove the bay leaf and serve over white rice or use as a stuffing for empanadas
