After a very long and busy week Dave and I decided to go out on a much needed date night. While my mom watched the boys we quietly slipped out ( ok it was more of a sprint to the door). Don’t get me wrong I love my boys very much but sometimes you just need to get out!  Anyway, we were in the mood for green curry and there was this little neighborhood thai restaurant that we’ve been wanting to try for the longest called Frankly Thai. Dave and I pass it all the time while driving down the road. This restaurant is rated 5 stars as well as receiving the “Best on Long Island” award so we decided to finally check it out.

So with the baby finally here and summer only three months away I’ve been really trying to eat healthy to get my pre-baby body back. (Maybe lose even more weight) To help me stay on track I create a meal plan for the week. On Friday night I write out a full menu and map out all my meals for the week. It makes eating healthy so much easier. I never have to stand in front of the fridge and think, “What should I have?” Everything is mapped out which leaves little time for me to grab something unhealthy. This afternoon I put together the most delicious tuna salad!

Mama’s Macaroni Salad

You have not lived until you try Mama’s Macaroni Salad! This sweet and savory pasta salad will make the perfect side to any summer bbq and will easily become your go to comfort dish. It’s so good that my mother in law (you all know her as Mama from Mama’s Beef Stew recipe) is not allowed to attend any family bbq’s or dinners without bringing her amazingly delicious macaroni salad. I know what your thinking….I thought it was silly too until I tried Mama’s Macaroni Salad myself. It has you wanting more every time. The saltiness of the ham and the sweetness of the pineapple mixed with the creaminess of the dressing….OMG! I just can’t! This macaroni salad was my ultimate craving the whole 9 months of my pregnancy. It’s also so easy to put together. Simply boil the pasta and mix everything together. That’s it! You don’t believe me? Here I’ll show you….

Potato Salad

Have you every eaten something that made you feel like home? You get that warm feeling inside and a rush of childhood memories runs through your mind as you enjoy every last bite.

Well, that is what this potato salad is for me. This is a very special very simple recipe created by my Nonna and I can’t remember a barbeque where it wasn’t served. Tomatoes and fresh basil from her garden, little fingerling potatoes, a drizzle of olive oil, just a touch of oregano, and a dash of salt is all it takes to make this amazing lite and delicious dish.


Reuben Sandwich

A Rueben Sandwich

One night around the time of Saint Patrick’s Day my mother brought home this big tray of thinly sliced corned beef. This thing must have weighed a good 5lbs. No joke.  I remember thinking what in the heck am I going to do with all this corned beef??? I have never in my life even eaten this type of meat and now I have enough to feed all of Long Island. After trying a piece I realized that it tasted like pastrami without the peppercorns. It wasn’t that bad. Dave suggested that we make Reuben Sandwiches. I’ve heard of this type of sandwich before but never had the urge to go and try one. In my head I imagined this big hunk of meat 4 inches tall and sauerkraut in between two slices of bread. At least that’s how I’ve always seen it in pictures. It didn’t really look like my kind of sandwich. But being the good wife I am I went along for the ride and got all the ingredients we needed to make this monstrosity.
