Roast Pork Tostada

In honor of Cinco di Mayo I’ve posted this very tasty and simple to make Roasted Pork Tostada!  A couple of days ago I posted a really great recipe for a Slow Roasted Pernil, which is a roasted pork shoulder. Dave and I went to Bj’s and bought this 10lb shoulder to make for meal prep Monday. With the new baby its been a lot more simple to cook in bulk on a Sunday or Monday and we would have dinner for the week. Needless to say we had a ton of leftover shredded pork. On the first night Dave and I had the Pernil over white rice with a side of black beans. On the next night we made delicious cuban sandwiches with warm soft cuban bread. Tonight I thought we’d celebrate Cinco di Mayo and make tostadas!

Pico di Gallo

In the Mexican cuisine Pico di Gallo is made from chopped tomato, onion, cilantro, serrano peppers, salt and the juice of a key lime. Many restaurants provide it as a side with nachos but Pico di Gallo is traditionally paired with tacos and fajitas. If you really want to kick up this recipe several notches creating a main dish that is out of this wold delicious then add cooked shrimp and make yourself Ceviche!

Ceviche de Camarones has to one of my favorite quick weeknight meals. It takes no time to prepare and is so full of flavor. Ceviche can be enjoyed over warm white rice as a main course or even as an impressive appetizer at your next holiday party! Serve with crispy tostones or Tostitos chips and let your guest dig in! Besides being incredibly delicious did you know that shrimp ceviche is one of the best guilt free things to eat when trying to lose weight! It’s high in essential nutrients and low in calories. Fish is recommended to people with high cholesterol levels, those at risk of heart disease, and even people who seek to stave of senile dementia, or Alzheimer’s Disease. Eating more fish is a great way to lose weight and stay fit!

These french onion soup sliders are packed with all of the flavor of onion soup and topped with melted Swiss cheese and caramelized onions! Now for those who know me know how much I LOVE a good bowl of french onion soup. The beefy stock, toasted crostini, and melted Swiss are what I crave on a daily basis especially during this pregnancy. Normally a real french onion soup is made with Gruyere cheese but I wanted to make this slider a little more affordable without losing that amazing melty cheese flavor and Swiss cheese did the trick. Perfect finger food for Super Bowl Sunday or as an easy weeknight meal these little sliders are definitely a must try!

Oven Roasted Pumpkin Seeds

So what do you do with your pumpkin seeds after carving out a pumpkin? Most of you, like myself, throw them out. Well not anymore! Have you ever tried oven roasted pumpkin seeds? I made them for the first time today and they are so good! They taste like crunchy pop corn and are incredibly addicting. Not only are they tasty but after some research I found out that these little seeds pack so many of the essential vitamins and minerals we need on a daily basis. They are especially good for expectant mothers, like myself, and their baby. After all this I just had to give them a try so Josh and I set out for the kitchen to begin our pumpkin seed experiment.

Zucchini season is almost here! Are you as excited as I am? No? Well, that’s ok. You will be as soon as you make these irresistibly delicious Zucchini Fritters. In Italian they are called Frittelle di Fiori Zucca. Now they aren’t made with an actual zucchini but the zucchini flowers. Have you ever seen them at the market?

To all my football fans out there these Crispy BBQ Wings are for you!!!! Hands down this has to be the easiest recipe I have ever made. Honestly, I’ve made salads that required more work. Not only are these wings easy to make but do you know how much money I saved? For this recipe I only purchased one pack of chicken wings from the market because I was testing it out. I ended up spending about $7 for a pack of 7 wings. Now each “wing” is really the wing and drum connected so in actuality I got 14 wings for $7. Is that a deal or what?!

BBQ Chicken Pizza – vegetarian & vegan substitutions included!

This delicious BBQ Chicken Pizza was inspired by a dish Dave and I had had one night at a restaurant called California Pizza Kitchen many years ago. Have you ever eaten there? They are know for their extensive list of unique pizzas. I put my own little spin on this recipe and will admit it came out amazing! I used some grilled chicken that I had leftover from the night before but you can either grill it fresh or even use an oven roaster from the market. This is a great quick weeknight meal for those nights when you come home from work and don’t want to spend another hour in the kitchen to make dinner. You can also serve this pizza as an appetizer. It’s great finger food especially with the Superbowl coming up soon.  The mix of the garlic oil, honey bbq sauce and sesame oil make this pizza out of this world! I know….they seem like ingredients you would see out of a Chopped basket but honestly they come together so well and create a pizza loaded with flavor.

With the new year comes a feeling of new beginnings, future goals, and if your like me the annual decision to eat a little healthier. Now most years this feeling would only last a few months and then slowly fade as soon as we get into bbq season. But this year I am really going to stick to it! I did my research (I tend to research everything!) and I’m ready! Whose with me???

Now don’t worry I’m not going to turn all health nut on you. I did mention that I am Italian. Pasta, bread, and cannolis run through my veins but I will be incorporating some healthier recipes for lighter meal planning. I’m a firm believer that you do not have to remove certain foods from your normal diet but you do have to have them in moderation.
For example…if you like ice cream like I do…only have one scoop instead three scoops drizzled with Nutella topped with homemade whipped cream and a cherry. Ahhhh! Ok ok lets get back on track. Eating healthier!
