What is Anxiety?
Anxiety is a constant heaviness in your mind. It’s that heart pounding, sweating, nausea, chills, shortness of breath, and dizzy feeling that comes out of nowhere. Sometimes anxiety will make you feel restless and constantly distracted. It feels as if your thoughts are running wild in a million different directions, bumping into each other along the way. Sound familiar? For many of us these symptoms are all too real.
I have personally suffered with anxiety for many years starting when I was a child. As I got older my panic attacks grew worse and more frequent. There were times when I felt like I couldn’t even breathe. As a result my grades suffered, relationships failed, and achieving goals seemed impossible. Anxiety is scary and it’s no joke. It wasn’t until I found a few reliable techniques to reduce anxiety that I was able to get better.
“Personal development covers activities that improve awareness and identity, develop talents and potential, build human capital and facilitate employability, enhance the quality of life and contribute to the realization of dreams and aspirations. Personal development takes place over the course of a person’s entire life.” Indeed, that’s a great meaning of personal development from Wikipedia but I believe it’s a lot more than that.

Personal development is about discovering you, nurturing yourself and transforming yourself into the person you are meant to be. Ordinarily humans are meant to stand upright and walk. A baby starts by crawling, and then will move to a standing position by herself/himself before staggering to walk. That’s exactly what personal development is, a gradual process of becoming the best version of you. In this constantly evolving world, to become successful, live your dream, and achieve bigger things can be quite the challenge. But did you know that it actually is very possible and everything you need to achieve your dreams is already in you!
The secret for a balanced life is a balanced body, and yoga is one of the most effective activities to achieve this important aspect of our lives.
Yoga is an ancient Indian tradition that is now practiced all over the world because of its innumerable benefits. The practice is a complex of physical exercises (“Asanas”, the many positions that you should reach during the practice), of breathing exercises (“Pranayama”, the breath control) and of spiritual exercise, meditation.
Sitting around the dinner table on Easter I was talking with my Aunt and Uncle about the blog and how great its been going. I mentioned that Dave and I have been eating a lot healthier and wanted to incorporate more greens into our weekly meals. My Uncle gave me the greatest idea for Sauteed Kale and Cannellini beans. Its incredibly healthy and really delicious. Well that night Dave and I went to the market to pickup some kale. The next day we tried my uncles recipe and now we are hooked! It is so simple to make and packed wit flavor. I always thought the kale would be a bit bitter but not at all. It soaked in all the wonderful garlic flavor and pairs so well with the sweetness of the sauteed onions. In the words of my husband, “This recipe is definitely blog worthy!” Thank you Zio Gino for this really great recipe I can now share with all my friends here on My Corner Bistro!
In honor of Cinco di Mayo I’ve posted this very tasty and simple to make Roasted Pork Tostada! A couple of days ago I posted a really great recipe for a Slow Roasted Pernil, which is a roasted pork shoulder. Dave and I went to Bj’s and bought this 10lb shoulder to make for meal prep Monday. With the new baby its been a lot more simple to cook in bulk on a Sunday or Monday and we would have dinner for the week. Needless to say we had a ton of leftover shredded pork. On the first night Dave and I had the Pernil over white rice with a side of black beans. On the next night we made delicious cuban sandwiches with warm soft cuban bread. Tonight I thought we’d celebrate Cinco di Mayo and make tostadas!
In the Mexican cuisine Pico di Gallo is made from chopped tomato, onion, cilantro, serrano peppers, salt and the juice of a key lime. Many restaurants provide it as a side with nachos but Pico di Gallo is traditionally paired with tacos and fajitas. If you really want to kick up this recipe several notches creating a main dish that is out of this wold delicious then add cooked shrimp and make yourself Ceviche!
This slow roasted pernil is a Puerto Rican dish commonly made during Christmas but in my house we make it all year around. While roasting in the oven get ready because your home will be filled with the mouth watering aroma of garlic, cumin, and bay leaves making this pernil the most flavorful and tender fall off the bone dish you have ever had! The shoulder is an inexpensive cut of pork allowing you to feed a large crowd for pennies on the dollar. Pernil once roasted can be used in countless amount of dishes like tacos, pulled pork sandwiches, crisped up and added to your mangu, in chili, your morning hash, and, the most popular way, homemade cuban sandwiches. Omg they are the best! The list goes on. There are two ways to slow roast your pork shoulder, either in the oven low and slow or in a crock pot where you can “set it and forget it”. In the recipe below I give directions for both ways.
Picadillo is a Cuban hash traditionally made with ground beef adding raisins for a bit of sweetness and olives for a bit of saltiness. This turkey picadillo is a low carb spin on a Cuban classic dish. I substituted the raisins with sweet red bell peppers, as well as ground turkey for the ground beef creating a healthier and very delicious dish that can be served over white rice or even used as a filling for your empanadas.
Pesto spaghetti squash is such a simple dish to make and is incredibly tasty both hot and cold. In just a few simple steps you will have a delicious and healthy “spaghetti” dish the whole family will love. When roasted or baked the spaghetti squash naturally has a sweet taste to it. When pair with a savory sauce like pesto the two flavors come together beautifully. The best part about this delicious dish is that it is very healthy. Both pasta and spaghetti squash have low amounts of fat, salt, and fiber. However, pasta has over 100 calories, while spaghetti squash has only about 20 calories, is richer in protein, and has far fewer carbs than pasta’s 31 grams. Spaghetti squash is not only low in carbohydrates but is also rich in antioxidants, such as vitamins A and C, B-vitamins, beta-carotene, lutein, zeaxanthin, and essential minerals. It also contains the essential fatty acids omega-3 and omega-6, and has potent antimicrobial properties. It is a guiltless treat and definitely a better choice than your regular pasta
After a very long and busy week Dave and I decided to go out on a much needed date night. While my mom watched the boys we quietly slipped out ( ok it was more of a sprint to the door). Don’t get me wrong I love my boys very much but sometimes you just need to get out! Anyway, we were in the mood for green curry and there was this little neighborhood thai restaurant that we’ve been wanting to try for the longest called Frankly Thai. Dave and I pass it all the time while driving down the road. This restaurant is rated 5 stars as well as receiving the “Best on Long Island” award so we decided to finally check it out.
